    I've eaten here a couple time and I think its great! About average sushi prices and the presentation is really cool with fun sauce art on the plates, and we got free edemame for an app....overall I will definitely eat here again

    I was hesitant to eat here based on the rating, but I found the Habachi to be quite good. The salad was ok and the soup was so-so but the actual dinner was good. Do not order any drinks except beer as the portions are small but all in all it was tasty. 'Nuf said.

    OK so let's get this straight. The only things Japanese in this entire place is the name and the menu. No one working there knows Sushi from Hari Kari. I've eaten there twice, becuase I am a prisoner, I mean resident of Castle Rock and this is not a great gastronmical region For a town with the average per capita earning of this place the only thing I've found commensurate in the local resturants are the prices, it's so depressing. We've been here once before for the "hibachi" which should more appropriately be called "teppanyaki," where we were entertained by our chef Juan extinquishing his Onion Volocano using a little peeing figurine which caused my little girl to ask why we let them pee on on food. Last Friday, my little family of three went there, hankering for some Sushi or a close approximation. We ordered three rolls, a special "Crazy Girl" a nigiri style tuna roll and one of the house rolls, the " Volcano" for my 5 year old daughter with Tuna, Salmon, and "Cavier" i.e. Salmon Roe. As soon as the Valcono roll arrived my little one complained about it, saying "Daddy, where's the carviar?" (She loves carviar) Sure enough there wasn't any. When I asked the waiter about it he pointed specifically at a piece of imitation crab and said "there it is!" I found myself explaining the difference between fish roe and fake crab to the staff, even pointing to photos in there menu as a means of explanation. Their reply was that they didn't have any of that, and couldn't get it in Castle Rock. I did remind him that we are able to get it regularly about 200 yards away at King Soopers. But apparently that was the end of that and they simply walked away. Other then the fact that my five year old seem to know more about Sushi then the chefs and wait staff at Fuji do, all the rolls were very poorly constucted, disentigrating at the first touch of the "Hashi". Difficult at best to eat and the ingredients so so. My recommedation, if you can, go anywhere else, if you absolutely want to pay top dollar for bad Japanese food, this is your place.... Shefu ga mukashi 5-nenkan-miman no o shitte ireba, nigete!

    Definitely a hit or miss place. Have had some great food here and some horrible experiences. just would not likely recommend it. They deliver and have an online order service which I like, however they don't have half their menu items on the site so it is mostly useless. Sushi in Castle Rock is impossible to find but I would be glad if another place where to make an appearance.

    I really enjoy going to this restaurant. Miso soup is very good, salmon and rice is one of my favorites. Fish is fresh, basics solid. This is not Sushi Den (One of the finest Sushi spots in the country, IMO), but it is good dining and easily beats most choices in Castle Rock. If you want peace and quiet at lunch for business or discussion or just meditation, they will leave you alone. If you bring some kids for birthday party and want to be entertained, the hibachi chef will entertain you well.

    We were a little skeptical about going to dinner here based on reviews, but were pleasantly surprised. The service, the food and the entertainment were amazing. Definitely going back!!!

    I can understand previous "blah dont waste your time/money" reviews, my husband and I went to Mt. Fuji in the past and it wasn't that great... one time it was absolutely awful. But I feel that it has improved. They repainted so it does look brighter and nicer, their waitstaff is much more attentive to their customers, and the sushi chefs can make some awesome rolls (try the New York or the Green Devil). They also send out coupons in mailers quite often to save 20 percent on your bill M-F.

    This place is lack-luster. I have been to a host of sushi places from the upscale spots in free-standing locales to a number of little tucked-away places in malls and obscure locations...and while it's hit-or-miss sometimes..... I've been to this location twice....and that's two-for-two on the 'miss' list. Fish is not fresh or clean tasting at all. Rolls are boring and lack creativity. Rice in the rolls is without flavor and mushy in texture. Veggies are not always fresh or showing signs of good preparation. Staff is 'iffy' at best, and the ambiance is lacking for anything short of assembly-line sushi feel. I will probably give this place one more chance....and if the experience remains the same...I won't be back or recommend it.

    When it first opened, Mt. Fuji would rate 4 stars, but when they expanded (like many restaurants that expand) they lost their edge. The sushi is good, but not a good value, the atmosphere is pretty average. We used to really like the place, but now will drive up to Kenny Sonoda's at Park Meadows, or Sushi Wave in DTC for a sushi fix.

    The atmosphere is very average and plain, but the sushi is always fresh. It is a nice place to go for sushi when you don't want to drive out of Castle Rock. We have also had the habachi at Mt Fuji which is ok. My 3 years old thought it was pretty cool. The service is always fantastic. The restaurant is always clean. The thing we love about it is that it is always consistent.

    If I could give it -** I would. My husband and I went there this evening 2-15-13 and ordered several different rolls. Midway thru our meal a little bug crawled across the plate.. My husband squished it, before we could signal the waitstaff. Once someone came to our table, we were told it was normal, as we had ordered the sweet potato roll. Ick, ick,ick We will not EVER return

    I'm shocked by the reviews. I think this place is awesome for hibachi... like most places, the portions are huge, but I think the noodles here are the best I've had anywhere. And the chefs that I've seen do the hibachi all have been great - friendly, fun, and entertaining. I have tried only one of the sushi rolls and I don't remember it as being so horrible, but it's been awhile since I've had it - the hibachi is so good and plentiful, that I don't stray from that menu as it includes soup and salad appetizers. I only deduct one star because the place seems a little crowded. I think it would do them well to take a table out of re-think the floor plan. Otherwise, I've always found the service to be good and the hibachi to be top-notch. I highly recommend trying it for yourself - as these reviews seem awfully harsh. I'm just becoming a regular visitor to this area and for the last two years, I've never been disappointed in a meal that I ate at Mt. Fuji.

    If you want 30 to 45 minutes of peace, with no one bothering you or pestering you with questions, this is the place for you. Once the waitress took our order, we did not see her again until she dropped the bill on the table. Efforts to get her attention went ignored. Water glasses did not get re-filled. No asking if we would like order something else, or if we would like some more sake, or even if we wanted desert. Food was acceptable but the service is HORRIBLE.

    Moving to Castle Rock from L.A....you can assume My Hub and I are big time sushi snobs. We laughed at the idea of Sushi in this area (actually we were scared), until we went here. The fish is always fresh (not fatty at all!), it has a large menu with plenty of "non sushi" plates for the squeamish, and they've broken down a wall to create a huge Hibachi area next door. Decor is simple, bar list is simple but have great Saki, it's not romantic, but it's clean and has plenty of parking available. Seems to be kid friendly, plenty of families there when we go. One suggestion though - Try not to visit close to closing-time (like an hour), our last visit our server seemed to be more worried about closing out her register than sending us our second order. Other than that, always a great experience, great food and very affordable!

    This Mt. Fuji location is where my experiences with sushi began, once upon a lunchtime with a few friends. The atmosphere is simple: mostly-blank walls, one of which a mirror, making the space look deeper than it actually is. The family of service staff doesn't bring more than a smile to the table, where it's left until they pick up your penciled-in order, which they do after spending some time watching the TV that's nestled in the corner. The food is tasty, that is for sure. I've sampled of many of the rolls here but have yet to experience the hibachi offered, which, if it's anything like the sushi, will be a treat as well. The prices run like any sushi location, which means they can add up if you don't pay attention. At least they have free drink refills and offer hot tea. Mt. Fuji also delivers, a position I almost took. Unsure how efficient they are. This place was the first sushi location in town, and they stand a chance of being the best. If only they could get over themselves.

    Good sushi & reasonable price. We drive 25 minutes north just to eat here. We've tried 2-3 sushi restaurants in the area & this is our favorite. The service is pretty average, but the food is good & the service is at least prompt.

    Mt. Fuji use to be a great place to get quality Japanese/Sushi in Castle Rock. Not any more. This was my son's all time favorite place! They have expanded so much and the quality has suffered. Their sushi roles are horrible, they are nothing more than ground up fish that they claim as different mixtures. The sushi chef must have had a bad night when we were there, because they looked as if they were made by a 8 year old. I would not be surprised if they were pre-made as they looked like what you get at the super market or a 7-11. Nothing like the pictures on their website... Their customer service is non existent if was like dealing with a dry cleaner or the airlines... Do your self a favor, if in Castle Rock and looking for a Japanese restaurant, take the extra 20 minutes and go up to Park Meadows or the DTC and have a nice meal for the same price with quality and customer service.

    I went there for lunch with my family recently. The setting is rather plain (at least compared to other hibachi places I've been to), and it was empty when we arrived. The staff was polite enough, but they were just "there", not doing anything special to make you remember the place. This included the table chef. The food was just fine; but again, not memorable. I'm sure this is a random thing (I hope!), but both my wife and I had "issues" in the stomach region after eating here. My son was fine, so we think it was from the egg in our fried rice. But needless to say, it's soured me to the idea of going there again.

    It may be the best sushi in castle rock but that doesn't make it good sushi. The fish seemed fresh enough. However all of the fish including the Tuna and Salmon seemed soft and mushi. The Rolls were not as flavorfull as most sushi places. It is worth the drive to Junz in Parker for sushi.

    Some of the best food in Castle Rock, but dull decor. I'm absolutely addicted to the hibachi steak and have endured the same lame hibachi grill jokes ("Egg roll!") again and again to get a taste. The staff are friendly and VERY attentive. You're treated to salad, a tasty light soup, meat, rice and vegitables as part of the package, and it's a great restaurant for kids, who will love the fireballs and onion "volcano" lit right in front of them. The only drawback is the somewhat dull decor of the restaurant which features little more than colored wallpaper and a giant bulletin board full of photos of past patrons. All in all, I'd highly recommend it as my family's most visited restaurant in town, but suggest a restaurant in the historic downtown area if you're looking for a little more elegance and charm in your surroundings.

    Went there for lunch special--2 rolls plus miso soup and a salad--and was pleasantly surprised by the quality of the rolls-very fresh and tasty. The soup was very good as well, and that's where some sushi places will try and cheat. No watered-down broth here! The salad was the usual lame american version with iceberg and a few cuke & tomato slices wallowing on top--nothing special. But the rolls--Alaska and yellowtail---were as good as anywhere I've been--and I go to a LOT of sushi places.

    I went with another couple and I really liked it. If I had any complaint it would be the price but for this kind of place it's probably right on par. We all had a great time. The other couple had Sushi and they didn't say it was the greatest but they liked it. I had the steak and I really liked it. The atmosphere was great and although it was hard to understand the servers they were pretty good.

    Let's face it. We live in Castle Rock. Castle Rock. Finding sushi here at ALL is worth at least ONE star. We have been going to Mt. Fuji since they opened 5 or 6 years ago. Again, we were so thrilled to have something other than Applebee's and Chili's and fast food that we were admittedly somewhat blinded by the Mt. Fuji glow at first. The sushi itself (Sashimi for me) is always fresh and of very good quality. It is not spectacular or special really in any way. But it is edible and tastes fine. My children have chosen Mt. Fuji for their birthday dinners for years. They are allowed to take a friend with the whole family. That bill always adds up but they have a great time. I don't care much for the Hibachi food itself (too salty) but everyone else loves it. The presentation is always fun and even though we all know what's coming we get a kick out of the burning volcano and the grill lighting up every time. What I have decided about Mt. Fuji is that, it is a lunch place. The atmosphere is much better suited for a lunch affair than dinner. The lighting is bright and the seating is not comfortable. I do like to come here with friends for lunch occasionally while the kids are in school. We always get great service, every time we go.

    My wife was sick all day today after having supper at Mt. Fuji. She thought the scallops tasted bitter and only ate 3 of them. We have been going to this place for five years and never been impressed but it is local. We will not be going back again after this experience.

    Mt. Fuji is just fine when you want Japanese food without a long drive. We live between Monument and Castle Rock, a true no-man's land for dining. When Mt. Fuji opened in Castle Rock we were thrilled to have it as an option. The fish was (and still is) fresh. The rolls are about average, satisfying but you won't be "amazed" by them. The hibachi is ok but not my favorite. Other dishes are average. My view of Mt. Fuji has certainly declined over the years as better options have opened up just a few miles further north in Lone Tree. We'll still stop at Mt. Fuji when we just don't feel like the extra drive, but when we have a real craving for Japanese we head elsewhere.

    Previous reviewer said this was the best Sushi he's found in Castle Rock ... that isn't saying much. The sushi here isn't very good nor is it a good value ... In the future I will just wait and go to Sushi Den on Pearl in Denver ... much better. No distinctive flavors here... I hear the Hibachi is pretty good, but I've never tried it.

    Mt. Fuji is about as good as it gets for sushi in Castle Rock....it may not being saying much, but it's still good! The hibachi is always a fun experience and great for first timers to the restaurant or kids. The food is average, although some menu selections are especially yummy. The atmosphere is lacking, but it's great for a casual night out and some inexpensive and good Japanese fare. Try the sweet potato tempura roll...it's fabulous!

    I gave Mt Fuji 1/2 star for being in Castle Rock and 1/2 star for not making me sick. I stopped in and got a couple of rolls after dental surgery in Castle Rock. The sushi was terrible. It was very fishy and mushy. The salad was old and wilted. The restaurant didn't look clean either. If you want good sushi, drive into Lone Tree or Parker.

    Even adjusting your taste buds for Colorado sushi, this place still gets a 1 star. The rolls were pricey. The ratio of insides to rice was way off. They were flavorless for the most part. Many of the rolls we ordered (in the $10 range) didn't fit the descriptions. One had a weird and funky chipotle mayo drizzled on it. The spicy salmon and tuna rolls were gross- mushy shredded goop, not a small piece of the fish. The fish was warmer than felt right. The rolls fall apart when you try to eat them. The roe is sparse, like they are cutting corners and trying to use as little as possible of anything expensive. We received one roll that was almost entirely cream cheese even though I hate cream cheese in sushi and definitely didn't order that. The sushi boat it was all served on was grimy and the presentation was a mess. I do have to say the wait staff was attentive, refilling water glasses, bringing the check. AND we didn't get sick but I will never go here again. If you like sushi drive a little or a lot farther and enjoy better food.

    The selection here is limited and I ordered my usual sashimi sampler. Salad was limpy and too much dressing. The fish was not fresh and already begining to smell very fishy. Think for sushi you have to make the drive to Denver to get fresh. Try Sushi Den always a winner! The restaurant is smokey especially when the hibachi grill in on...after dining you end up smelling like the restaurant. It's not the most appealing when you find the chef smoking a cigarette in front of the restaurant and goes right in to make sushi without washing his hands. I witnessed this on my way out. The decor so so and service is weak. Don't think the owner cares much. Not a place I would recommend to friends.

    This was our first time to Mt Fuji. This location is in a shopping center plaza. The decor is a little disappointing. It's very old and kind of tired looking.. My dish and soda glass were both dirty, pretty gross! That said, the show was entertaining, our chef was funny and engaging. The food was awesome and everyone received large portions. In the end, I will go back. I can overlook the decor because the food was great.

    This is a less formal Benihana-type restaurant. You can dine in and order from a menu, but I highly recommend eating at the hibachi grill. You are entertained--seeing the very talented chefs prepare and cut up the food and cook it right before your eyes with no lack of fanfare. It is a fun experience, and the food is really delicious! ps--order the friend rice...it is THE BEST fried rice I've ever had!

    Check out the bento box for lunch - get the tempura. AMAZING. They're stepped up their teppan-yaki game. Except they call it hibachi...which isn't really the correct word. I would suggest sitting in the room furthest from the door, the table heights are better. The ones on the other room are uncomfortably high...evening 6'3" husband felt awkward.

    Once again, Mt. Fuji is trying to STEAL from customers. The prices on the check will not match your sushi checklist sheet. They try to excuse it with "oh, but that isn't our new menu" and act like you should have known. Well, I never SAW the new menu. I put the number of rolls next to the name and price on your checklist. We were charged 20% more per roll. I wouldn't 'make a fuss over this, generally, but the same thing happened over two months ago. I am confident that it happens to everyone who comes in there and orders sushi. I told them "If I walk out without paying you, I am stealing from you. When you charge me more for your items then advertised, you are stealing from me!" The tempura appetizer and Hondado roll were both very good, but the salmon, spicy tuna, and eel/avocado rolls were meh. The server was quick with the green tea refills and considerate enough to not reach past us, but go to the other side of the table to pour tea.

    We have lived here for almost 2 years now, and this is the only sushi place in town that we will go. Each time we have visited it has been a positive experience. The most recent visit was a take-out order. They were kind, efficient, and engaged me in conversation as I waited for my food. The waitstaff all seemed very friendly and were very knowledgeable of the different sushi rolls. My order was delivered to me quickly and it tasted awesome. It is difficult to find good sushi in a landlocked state, but I am glad that I found this place. I haven't tried their happy hour sushi yet, but it is on my list.

    Two roll lunch special with soup and salad under $10 . Eel cucumber & spicy crunch tuna rolls -always a favorite . Sweet potato rolls & salads like creamy squid with mas-ago ( fish eggs)or sunomo (octopus )&even the seaweed wakame are also great. I never come for dinner . The sweet deals at lunch are too good ! I do lunch here often . The cool air conditioning and brewed tea refilled often by anyone On staff . Such a nice " break " always. They also offer hibachi knife show dinners and yakatori , tempura and bento boxes . They have alcohol& happy hour .

    We lost a lot of love for this place over the last year. Tip: if you are looking for an entertaining night of hibachi, you will totally be happy overall. The hibachi chefs are great. If you are really into sushi, I would skip this place. Super overpriced for what you are getting, I highly suggest NOT getting the spicy scallop roll because this is one of those places that fill it with Panko crumbs so they can skimp on the scallop filling and still charge a lot. Sushimi is sometimes rubbery.The service on a busy night is really frustrating. We've gone on an anniversary night and get dirty looks because we aren't throwing our food down pig trough style and enjoying our night together. They want you to get in then GET OUT. We've moved over to Fontana sushi which is close and never been disappointed in any of these areas.

    With only one other option for sushi in Castle Rock this place works. They have a killer lunch deal. I got a ton for the price. The salad dressing is KILLER. It is ginger and it is amazing. Like bottle it up and sell it amazing. In the shrimp tempura lunch meal it comes with two shrimp. But before the meal they give you free edemame too. WOW. nice touch. The only thing is they are overstaffed. How often do you complain about that?? So the servers all stand by the bar and just stare at the tables. A little over the top, need to give a little breathing room there. Just because I was seated right next to them so it was a tad uncomfortable. Very friendly though.

    First off, we ordered take out and a large number of items from across the menu. The sushi was OK, nothing mind blowing but the prices will make you think otherwise. The chicken teriyaki was under cooked and still pink in the middle. Needless to say, I ended up finishing the cooking at home. My pregnant wife decided to skip the chicken. The Bento A box was again just OK and the beef teriyaki was at a medium rare, which is fine if it wasn't ordered well done. And for a thin steak like that, it would be hard to cook steak like that and get a med rare. It is hard to believe that a kitchen like this can't use a probe thermometer to check meat. Now it makes me wonder what else is going on in the back? I only all because this is not the end of the problems. The salads that came with the meals were just iceberg lettuce, a green tomato and a thin cucumber. Oh yeah, the lettuce was frozen and brown... looked like it was cut and boxed a couple days ago. For the total on the bill and what we received, we easily got robbed on this visit. These type of places are a dime a dozen, let this one die and save your money for some enjoyable food.

    Ok. Ready to defy logic? Your going to love this review if your thinking about stopping by during happy hour. Read on. Mt Fuji advertises a great happy hour. Half price drinks, buy 2 special sushi rolls get 1 free, $3 apps, and buy an adult hibachi and get a kids hibachi for $.99. Sounds great right? Here's where it gets weird. I've had dinner at this restaurant several times and on any other day would generally recommend it. Not the greatest sushi on the planet, but for Castle Rock, not bad. Hibachi also. But at happy hour, they show their true colors. We took the kids at the tail end of happy hour and ordered 3 special rolls (1 should be free) and 2 adult hibachi meals so the kids could get one for .99. Crazy right? Well, they tell us we can only use one coupon. To which I respond, uhhhh.. We aren't using a coupon, it's the happy hour special advertised on your window outside, on table tents , etc. Nonetheless, they insist I am not able to use 2 happy hour specials at one table. My logical retort inquired into how this works if I bring colleagues in for the half price drinks. Can I only get 1? They of course say no. So I ask can I get the $3 app and a 1/2 price drink. Well yes they say. So can I order the sushi and hibachi specials when I come with a large party. No! Ok. I'm confused, so we left to grace another restaurant with our apparently outlandish requests . :) Consequently, they lost a rather large and regular customer due to their illogical and unpredictable subjective pricing. Good thing we discovered this before we got the check. Hope you benefit also. Be advised.

    Stopped going here because it was going a down hill. They have improved. The service was excellent. They have an extensive Sushi and Sashimi menu but I dont do raw fish. Had the Tonkatshua , rice, California roll, miso soup, crab cheese wontons and salad with ginger dressing. Everything was great. May make it a regular lunch place again.

    The sushi is ok-- but they need to read directions!! I've ordered online a couple times, and there's an option to put in specific directions about each item. And everytime, they never read it. It makes me wonder about what they do in the kitchen, if they can't read what I need in my order. It's been wrong every time. Unfortunately, it's one of the few sushi places close. So, I'll have to be going somewhere else for my take out.
